I am a chef by trade. My mother and grandmother were chefs. The professional kitchen is my home and I've always felt the most comfortable in a busy kitchen being slammed by tickets. Knives have always been a status symbol in this industry, no matter how many admit it- you always look down at a fellow chef's kit and think, "Shun, Global, Corin, etc... ok they must know a thing or two". Many would be lying if they said they hadn't. I have always been fascinated by the process of how knives were made. As a chef, I've always bought knives when I needed them, for milestones and occasions, or retired them to my home kitchen just so I could get a new one. It took me over 20 years in the industry before I even thought of making one on my own. In 2020, during the COVID19 pandemic, I decided to make my first kitchen knife.
